Kids and Baking Series-Lower Carb Chocolate Chip Banana Muffins Review

Recipe makes 12 muffins!

I’m trying to watch my carbs and sugar. I was excited to find this recipe for chocolate chip banana muffins from ifoodreal. You can easily make them paleo and added sugar free! I think the secret to the great texture is that you use a blender!

Ingredients

– 3 bananas
– 3 eggs
– 1 tsp vanilla extract
– 1 tsp cinnamon (optional in my opinion. My 3 year old didn’t want to put this in. She has it in her head that it’s spicy or something. They’re still delicious.
– 1 tsp baking soda
– 1/2 tsp baking powder
– 1/4 tsp salt
– 3 cups almond flour
– 1/4 cup chocolate chips (here’s where you can get creative. For truly added sugar free, use Lily’s. I use Enjoy Life, which technically has sugar, but is less expensive.)

Instructions

1. Preheat oven to be 350 F.

2. In a blender or food processor, blend together everything except almond flour and chocolate chips until smooth. I actually used a nutribullet because we don’t have a blender anymore. It worked fine, except I had to half the recipe because it’s not big enough for the whole thing. I did end up with 4 eggs total this way since I couldn’t split an egg in half. The extra egg didn’t seem to hurt anything.

3. Add almond flour and blend until just combined. Scrape down sides and blend again.

4. Stir in chocolate chips.

5. Bake in greased or lined muffin pan for 30 min.

Nutrition

Totally healthier than traditional banana bread! You won’t even miss the added sugar. These are delicious! About 11 net carbs and just 7 grams of sugar!

What’s in it for kids?

Kids will love them and you’ll be glad not to feeding them so much sugar. My daughter also likes helping measure and stirring in the chocolate chips.
