So when my daughter turned 3 earlier this year, she requested white cake with chocolate chips in it. I found a great recipe online that we made again, into cupcakes this time, for my mom’s birthday.
Growing up, we always made cakes from mixes. Honestly, I kind of thought that was just how you did it, until I recently started making things from scratch. It’s not as hard as I thought and you have so many more things you can do. Plus, I don’t think I could have gotten what my daughter wanted in a mix, but I could be wrong, been a while since I shopped those! These were the finished product! Aren’t they cute?
I used a base recipe from Woman’s Day, but we added our own flare, in this case, honey bees, yellow frosting (Grandma’s favorite color) and sprinkles, to ours! I’ve made this multiple times now and, honestly, never fully followed instructions. Once, I forgot the water completely. I also don’t mix wet and dry separately or add it slowly. I have a 3 year old. I throw everything in and let her mix it up with a whisk. This recipe is super forgiving! I have noticed that the chocolate chips tend to sink, so I wonder if following directions closer would fix that. My husband even likes that they sink. He says it adds a nice layer to the bottom!
Ingredients
- 2 cups flour
- 2 cups sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup milk (I use unsweetened almond milk)
- 3/4 cup of oil
- 2 eggs
- 1 tbsp. vanilla extract
- 1 cup mini chocolate chips
All we did was whisk dry ingredients then add wet. Last, mix in chocolate chips. (Let your kid eat couple because she’s so helpful?)
Bake at 350.
About 20-25 min for cupcakes or a round cake
35 min for a 13×9
Just make sure a toothpick comes out clean.
- Frosting- I use Miss Jones-yum! It’s organic and dairy-free! Chocolate and vanilla both go well with this cake.
While I only showed 12 cupcakes above, this recipe makes more than that. I didn’t have enough muffin tins, but you can make 24 cupcakes, 2 round cakes or a 13×9 sheet cake. I actually did this combo:
