Kids and Baking Series- Homemade Brownies Recipe Review

In addition to cake, brownies are another thing that I never made from scratch as a kid. I think mixes were just super popular in the 90’s. That’s just what we did when we made cakes and brownies. I do remember cookies being another matter and we always made these from scratch.

I’m proud to say that I just completed my first batch of homemade brownies {cake was earlier this year}! You haven’t lived until you’ve eaten brownies from scratch. This recipe that I found on The Stay at Home Chef is incredibly rich and delicious.

Ingredients

  • 1/2 cup + 2 tablespoons melted butter {I used Vegan “Butter” Earth Balance and it worked just fine!}
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup melted chocolate chips {I used Enjoy Life}
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. The original directions call for a 9X9 pan, but I somehow have an 8X8 pan, which works just fine. You just need to add a couple minutes to baking time. Line with parchment paper. If you spray Pam first, the paper will stick easier! That’s a pretty nifty trick.
  3. Whisk sugar into melted butter by hand for 30 seconds.
  4. Add eggs and vanilla. Whisk for 1 minute.
  5. Whisk in melted chocolate until smooth.
  6. Stir in flour, salt and cocoa powder with rubber spatula until just combined.
  7. Stir in other chocolate chips.
  8. Bake in pan for 30 minutes and let cool 30 minutes before cutting.

Notes: These were fun to make and super delicious. Beware though–they are addicting and go great with coffee!
