While I really liked another form of fat bomb, which I will write about later, I needed something new, so I tried this recipe with some tweaks. I forgot to take a picture the last time I made them, but they look just like raw cookie dough. That is part of the appeal as I remember licking the beaters after making chocolate chip cookies as a kid. This is not advised and way too much sugar, but as a kid it was awesome. Haha. Too bad I can’t have that luxury anymore! The recipe below includes dairy, but as I’m dairy-free, see the modifications section for what I changed.
Ingredients:
1 cup/8 oz of softened cream cheese
1/2 cup softened butter
1/2 cup peanut butter
1/4 cup erythritol
1 tsp vanilla
4 tbs chocolate chips
Directions:
1. Take out the cream cheese and butter and let it come up to room temperature to make it easier to work with.
2. Mix together all ingredients, except chocolate chips, with a mixer.
3. Stir in chocolate chips.
4. Refrigerate the mix for at least an hour.
5. Use a scooper, or your hand, and form balls.
6. You can put them in candy cups like the original recipe. I just put them into a container and made sure they didn’t touch.
Modifications:
The first time I made these, I put them in the freezer, but they seemed to lose some flavor that way, but they were easier to eat. The second time, I just left them in the fridge and they were gooey, but still manageable.
I’m dairy-free, so for the cream cheese, I used Daiya and for the butter, I used Earth Balance. I’m not crazy about the soy in Earth Balance, but haven’t been able to find their soy-free version in sticks yet.
Review:
These fat bombs are good for a change of pace and I did make them twice in a row. They are pretty good, but the cream cheese flavor is pretty strong. Because of this, they don’t taste as close to raw cookie dough as I would like and it makes them really rich when you eat them. You also need to watch some of the carbs because that’s not as low as I would have liked either.
I will make them again, but I need a break for a bit. Let me know what you think!
