In addition to cake, brownies are another thing that I never made from scratch as a kid. I think mixes were just super popular in the 90’s. That’s just what we did when we made cakes and brownies. I do remember cookies being another matter and we always made these from scratch.
I’m proud to say that I just completed my first batch of homemade brownies {cake was earlier this year}! You haven’t lived until you’ve eaten brownies from scratch. This recipe that I found on The Stay at Home Chef is incredibly rich and delicious.
Ingredients
- 1/2 cup + 2 tablespoons melted butter {I used Vegan “Butter” Earth Balance and it worked just fine!}
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup melted chocolate chips {I used Enjoy Life}
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
Directions
- Preheat oven to 350 degrees F.
- The original directions call for a 9X9 pan, but I somehow have an 8X8 pan, which works just fine. You just need to add a couple minutes to baking time. Line with parchment paper. If you spray Pam first, the paper will stick easier! That’s a pretty nifty trick.
- Whisk sugar into melted butter by hand for 30 seconds.
- Add eggs and vanilla. Whisk for 1 minute.
- Whisk in melted chocolate until smooth.
- Stir in flour, salt and cocoa powder with rubber spatula until just combined.
- Stir in other chocolate chips.
- Bake in pan for 30 minutes and let cool 30 minutes before cutting.
Notes: These were fun to make and super delicious. Beware though–they are addicting and go great with coffee!
